Fruity Microgreen Parfait with Honey Cinnamon Granola
Creamy yogurt, fresh berries, and crunchy granola pair nicely with the sweet taste of cantaloupe microgreens. These microgreens are high in vitamins A, C, and K, as well as antioxidants. Their fruity, floral flavor is a great addition to this healthy snack or light breakfast. The honey cinnamon granola is quick to make, and a great pantry staple to have on hand to toss into this yogurt dish, or eaten on its own.
What you will need
Microgreens
Cantaloupe microgreens add a fresh, fruity flavor to this parfait. Sunflower microgreens are another great option.
Greek Yogurt
I use plain yogurt, which is sweetened by the addition of the fruit and granola, but your favorite flavored yogurt would be good as well.
Fresh or frozen berries
Granola
Use your favorite store bought granola, or try my recipe!
Honey Cinnamon Granola Recipe
Ingredients
2 cups rolled oats
1/8 cup honey
1/8 cup oil (coconut or avocado)
1/2 tsp cinnamon
1/4 tsp salt
Directions
Preheat oven to 300 degrees. In medium pot, heat honey and oil until melted and well combined.
Add oats, salt and cinnamon. Mix well.
Transfer to parchment lined baking sheet. Place in oven and bake for 20-30 minutes, stirring every 10 minutes. Once granola is toasted evenly, remove and allow to cool.
Use as a topping for a yogurt, or a delicious snack on its own! Add additional mixins, such as dried fruit or nuts.
