How to Eat Arugula Microgreens

Arugula Microgreens

If you love the spicy, peppery taste of Arugula, then the microgreen version is about to become your best friend. The microgreens have the same flavor, but slightly milder due to the small size.

Arugula is known for its antioxidant properties, and is a great source of fiber, which supports digestive health. It is also high in vitamins E, C, and calcium. Along with these great health benefits, it has a unique flavor and can be eaten in the winter months when fresh, local produce is harder to find.

If you are new to Arugula, or are looking for a new way to enjoy an old favorite, try out one or both of these recipes.





Lemony Sundried Tomato Quinoa with Arugula Microgreens

Makes a great side dish, or a light meal on its own. Add cooked salmon or chicken for additional protein.

Ingredients

  • 1 Cup cooked quinoa

  • 2 Tblsp sundried tomato, chopped fine

  • 2 tblsp sliced green onion

  • 2 tblsp feta cheese

  • 1/4 tsp salt

  • 1/4 tsp pepper

  • 1-2 tblsp extra virgin olive oil

  • Juice of 1/2 lemon

  • 1/2 cup arugula microgreens

Directions

  1. In a small bowl, combine sundried tomato, olive oil, lemon juice, salt and pepper. If you desire a smoother texture, blend with an immersion blender. Set aside.

  2. Toss together the cooked quinoa, feta cheese and green onion. Pour sundried tomato mixture over the top and mix until thoroughly combined.

  3. Finish by sprinkling the arugula on top of the quinoa mixture, and garnishing with an little extra feta cheese, if desired. Adjust seasonings to taste.


Makes 2 Servings


Herbed Turkey and Arugula Wrap

Ingredients

  • 2 oz sliced, roasted turkey breast

  • 1 tblsp cream cheese

  • 1/2 cup arugula microgreens

  • Fresh or dried herbs of choice; dill, basil, parsley, oregano etc.

  • Large whole wheat wrap, or wrap of choice

Directions

Spread the cream cheese on the wrap in an even layer and sprinkle desired herbs on top. Finely chop the herbs first if they are fresh. Layer sliced turkey breast on top of the cream cheese herb mixture and finish be putting the arugula microgreens on top. Roll up and enjoy!
