Sweet and Crunchy Sunflower Shoot Salad

This sweet and crunchy salad is the perfect compliment to grilled meat, burgers, or any other summer menu. Apples, candied walnuts, and a creamy dressing are paired with greens and nutty sunflower shoots for a refreshing side. Add grilled chicken and a sprinkle of feta cheese to make into a light lunch or dinner.

Sunflower Shoots

What you will need

For the Salad:

  • Sunflower Shoots

  • Lettuce or mixed greens

  • Walnuts

    For candied walnuts, heat a skillet over medium heat. Melt 1 tblsp butter and add 1/2 cup walnuts. Sprinkle 1 tblsp of sugar over the walnuts, and toast for 2 -3 min, stirring constantly. Once the walnuts are beginning to turn brown, remove from the pan and spread on a piece of parchment paper to cool. sprinkle with salt.

  • Apple

    To prevent the apples from turning brown, slice and place in a bowl of water with 1 tblsp of lemon juice. Drain and pat dry before adding to the salad.

  • Optional: feta or parmesan cheese


For the dressing:

  • Mayonnaise

  • Avocado oil or olive oil

  • Honey

  • Apple cider vinegar

  • Salt and pepper

  • Garlic powder

Ingredients

Salad

  • 4 cups mixed greens or lettuce of choice

  • 2 cups sunflower shoots

  • 1/2 cup sliced green onion

  • 1/2 cup candied walnuts

  • 1 cup sliced apple

Dressing

  • 1/2 cup avocado oil

  • 1/4 cup honey

  • 3 tblsp apple cider vinegar

  • 1/4 tsp salt, pepper and garlic powder

  • 1-2 tblsp water

Measure all ingredients into a bowl or mason jar. Whisk vigorously until combined, or blend with an immersion blender. Add water until desired consistency is achieved.

Directions

  1. Wash lettuce and sunflower shoots and dry thoroughly.

  2. Slice green onions and apple.

  3. To assemble salad, combine all ingredients in a large bowl. Add dressing right before serving.
