Balsamic Bruschetta with Fresh Microgreens
This past christmas, we were gifted balsamic vinegar imported directly from Italy. We were excited to try our bruschetta recipe using this stunning vinegar and topped with fresh microgreens. This appetizer makes a great starter for a dinner party, or a special occasion such as a birthday, Valentine’s day or date night. Or, like us, you can make bruschetta anytime you get the craving and have the right ingredients! The crisp, garlicky bread slices are toasted and topped with tomato, pesto and cheese, and topped off with a drizzle of balsamic vinegar and a sprinkle of fresh microgreens.
Ingredients
6-8 slices of French bread
3 tblsp butter, softened
2 cloves garlic, chopped
2 med tomatoes or 1 cup cherry tomatoes
2-3 tblsp pesto
2 tblsp balsamic vinegar
2 tblsp extra virgin olive oil
1 C. shredded mozarella cheese
Salt, pepper to taste
Serves 2-4
Directions
Thinly slice french bread and spread with a mixture of softened butter and garlic. Toast under broiler until golden brown.
Dice tomatoes and combine with pesto, balsamic vinegar, olive oil, and a pinch of salt and pepper, Taste and add more seasonings if needed.
Place two to three tablespoons of tomato mixture on the toasted bread slices. Top with an even layer of mozzerella cheese and broil until cheese is melted and bubbly.
Top with microgreens and drizzle with additional balsamic vinegar. Enjoy!
Notes
Basil, kale, broccoli or mixed microgreens will compliment this appetizer well.
Mozzarella- Fresh, cubed or pearled mozzarella is a delicious addition in place of the shredded. If you choose this option, skip the final broil.
